HOW TO SET UP A MINI BUSINESS OUTLET WITH KUNU DRINK AND BARBECUE

Good day ladies and gentlemen.
I’m very much delighted to be among the smartest, and as I take lead on a topic ” How to set up a mini business outlet with kunu drink and barbecue “.
My name is Taiwo Bello and I greet you all. All protocol duly observed, I tender forth my humble apology for presenting this lecture late as against its scheduled time. It was due to circumstances beyond me. I hope I’m forgiven.

I would have love to have an interactive session but situation might not make this possible. Nevertheless, I will still be willing to entertain questions. Anyways, I promise not to bore you with much stories, I will just nail the head. So, let’s hit the ground.

The topic “How to set up a mini business outlet with kunu drink and barbecue” will be viewed / treated in three (3) respects;

🌸 Barbecue (BBQ) / Grilling of fish nd chicken
🌸 Business of kunu and BBQ.

KUNU AYA PRODUCTION
🌻🌼..Ingredient
🌷Coconut 1/2kg
🌷Tigernut 1/2kg
🌷Dates 1/2kg
🌷Ginger 100g
Honey and Preservatives are optional

🌸🌺…Kitchen Equipment /Utensils
🌷Grinder
🌷Sieve (aso isegi)
🌷 Bottles and/or cups

🌻🌼🌸Preparation 🌻🌼🌸
🌷Wash and soak the Tigernut in warm water for minimum of 4hrs.
🌷 Break the coconut, cut it into sizes that can be handled by your Grinder
🌷 Wash your ginger and cut it into small sizes
🌷 Open the Dates to remove the seeds and wash it
🌷 Add everything together and grind to smooth
🌷 Sieve after smoothly grounded.
🌷 The juice obtained is🌸🌺 KUNU AYA 🌸🌺

BARBECUE/ GRILLING OF FISH AND CHICKEN
Barbecue is used synonimously as grilled as they meant same thing. Grilling can be electrically or mechanically done and in different ways. The marinade or sauce used can be made dry or moist/set. But I will try to share my little knowledge on the two.

🌸🌺…Kitchen Equipment /Utensils
🌷BBQ kit pack (includes griller stand, thong/picker, turner and bbq fork)
🌷 Frying pan
🌷 Cooking pot
🌷 Foil paper
🌷 Chopping board and/or Serving tray
🌷 Big bowl(s).
🌷 Refrigerator

HOW TO MAKE DRY SAUCE
🌻🌼..Ingredient
🌷 1/2 tsp salt
🌷 1/2 tsp white pepper
🌷 1/4 tsp dried basil
🌷 1/4 dried thyme
🌷 1 tsp garlic powder
🌷 1 tsp onion powder
🌷 Preferred seasoning (maggi)

Alternatively, there is a ready-made fish bbq sauce, use this with seasoning and salt.

HOW TO MAKE MOIST MARINADE/SAUCE
🌻🌼..Ingredient;
🌷 Red pepper / chillies ( remove the seeds )
🌷 3 lemon juice / white vinegar ( 100ml )
🌷 Groundnut oil (500ml)
🌷 6 gloves of garlic
🌷 Salts
🌷 Preferred seasoning

🌻🌼..Steps
🌷 Blend all, without oil, in a blender
🌷 Add oil little by little from top while blending
🌷 Blend until its smooth
🌷 Taste nd add more salts and chillies if required
🌷 Sauce is ready when it’s thick.

🌻🌼🌸 PREPARING THE GRILLING 🌻🌼🌸
🌷The fish/chicken must be in good shape (not smelling)
🌷Thoroughly cleansed, remove intestine, gill, fin and other dirt (preferably under running water)
🌷 Make 3 – 4 cut marks on the two sides (of fish)
🌷Sprinkle the marinade/sauce over the fish/chicken. Ensure the cut spaced on the fish is well filled.
🌷The fish can be foiled (esp cat-fish).
🌷Cook on a lightly greased grill for 8-10 minutes, tuning once during cooking time (for fish). Chicken rakes longer time.

🌸🌺Note: For best result, the fish/chicken should marinated for hours (over night in the refrigerator, not freezer, mostly for chicken) to allow penetration or absorbsion of the marinades within. The marinades can also be stored for later use, in a covered airtight jar in the refrigerator.
🌻🌼 This can also be done using a BBQ oven.

After all being said, knowing these production processes only, is not enough to set you on a go when it comes to the business world, the production process is just one of the needed skills, it only prepares you. So, let’s connect the dots.

Remember, I promised not to merry go round. I’ll ensure my submissions are brief.

You will agree with me that setting up kunu or/and BBQ business isn’t really different from any other business set up (either small or big). The service(s) each business offers differentiate them which also dictates few other factors such as business finances, administration e.t.c. However, every business set up is based on the same philosophy and principle.

To set up a kunu or/and BBQ mini business, the following needs to be under-studied and understood;

🌸🌷 Market Research
You need to identify your target market…who are your customers….e.g kunu is loved and taken mostly by all, it can be sold at offices, banks or any meeting points. Your immediate colleagues (at work place) can be your starting point. BBQ is also loved by all but most enjoyed by “child(ren) of the world” (if you know what I meant). People around the bar, those that enjoy fun, are the major target market.
So, Know Your Customer (KYC) is a paramount and first thing to research in setting up a biz, then this will tell how much they need it and how much they can afford
Also, identify / check out your competitors this will tell how to surpass your rivals; packaging measure; costing/pricing and others.

🌸🌷 Location
I’m sure you will agree with again on this that location is as important as the service itself. Locations kill so many businesses. Ensure your business is situated close to the target market. E.g: mounting your BBQ station close to a busy bar/guest house, except if you sell (or want to) beer with the BBQ. BBQ station can be mounted at the following strategic locations; entrance of an estate or residential apartments; beer parlour; busy areas that is paths/roads people walk/converged often, even at events too. I’ve been to few events where I’ve seen BBQ guys, not invited, but came to sell like those that come to sell drinks at party.

🌸🌷 Make Plans
How do you intend running the business, part-time or full-time? daily or weekends or specific days of the week? Try to work out a plan achievable and realistic for easy running of the biz. Let me help with an insight on this business. BBC is more of part-time thing to me cos I work at my spot only on specific days (Thur, Frid nd Sat but I do on Wed nd Sun too but not often) and I often work half day. I get to my station around 3:30pm. Make a plan simple and less stressful. Also have a marketing plan.

🌸🌷 Plan your Finances
Understanding the finance involved in proposed business is very essential. Good news is that the two business initiatives are less capital intensive. Infact, they are very affordable to set up.
Kunu, with just N5,000 or less you can start its business. Except, you wanna start big but I will advice to take it slow at first.
While BBQ, can be done with around N20,000, even less, considering the road side ones. However, if you wanna give it a befitting look and good presentations, then that might cost you more depending on your kind of package.
You can get a space/shop, brand it to your taste, then you can sell the two products there. You can even add other things like fruit juice maybe pastries if you care.

🌸🌷 Know Your Customer’s (KYC) wants
This is about understanding the business when engaged already. It’s very important to identify KYC wants. Pls note that you provide customers with their wants not their needs. want and need differs. Let me explain better with this example. At my station, I serve (smoked) grilled fish/chicken (BBQ) with veggies but some customers don’t like veggies and they always ask not to garnish it with the veggie which I do oblige. But do you know that veggies is notjust use to garnish the BBQ (smoked) but to suppress the effects of smoked foods in the body as smoke contains carcinogenic materials. So I know their body need the veggie but they don’t want even despite knowing themselves. If I insist then I’ll lose customers. And there are so many instances of such.

🌸🌷 Packaging
This should have been under one of the aforementioned but I felt the need to emphasize on this aspect. No denial that the package given to business determines it’s profitability.
Moreso, there is a notion I will like to clear, package does not lie only on the outside appearances but also within. E.g, people prefer buying local foods from buka, that’s untidy, unventilated, crowded, than eatery, that’s well kept, AC fitted. There could be other reasons though but it’s mainly cos of the taste.
The power of good BBQ is in its taste (the BBQ sauce). Do not be limited to what was taught here, research more style. Learn different sauce and style.
Also, grilled fish/chicken can be served or famished with plantain chips, potato chips, veggie, reen sauce salads, and so many. You can even create your taste/brand. Remember, cooking is all about creativity.

🌷Note: One good thing about BBQ is once you get noticed, you may not even have time for you shop cos you will be getting jobs everywhere like birthday parties, wedding, end of year events and the likes.
